Ingredients:
2-3 Med Baking Potatoes, peeled and cut into cubes
1 med sweet potato, peeled and cut into cubes
1 med sweet onion,diced
2-3 TbsOlive Shoppe Rosemary Olive Oil
2-3 Tbs Olive Shoppe Roasted Garlic Olive Oil
1-2 Tbs dried parsley
Salt and Pepper
Grated Parmesan

Instructions:
Preheat oven to 350*. Place cut potatoes and onions in a large bowl.Drizzle Roasted Garlic and Rosemary Olive Oils over potatoes and stir to coat. Sprinkle with salt, pepper and parsley and stir. Line large cookie sheet with parchment paper. Place potatoes on cookie sheet and distribute evenly. Cook for 20-30 minutes or until potatoes are tender. Be sure to stir potatoes every 10 minutes while cooking. Remove from oven and sprinkle with grated parmesan cheese and serve.
